Lasagna Soup Recipe

Brandon & I absolutely love this recipe...I think I do because it is so simple to make & hits the spot on such cold days like these...We are actually having it for dinner tonight!!
Lasagna Soup
1 pound ground beef
1/2 cup chopped onion
1 package lasagna dinner mix (Hamburger Helper)
5 cups water
1 can (14 1/2 oz) diced tomatoes, undrained
1 can (7 oz) whole kernal corn, undrained
1 small zucchini
Sour cream, cheese & tortilla chips to top - optional
In a Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink;drain. Add contents of lasagna dinner sauce mix, water, tomatoes & corn; bring to a boil. Reduce heat; cover and simmer for 10 minutes; stirring occasionally. Add the lasagna noodles and zucchini. Cover and simmer for 10 minutes or until the noodles are tender. Serve immediately. Yields: 2 1/2 quarts
